Paleo Pumpkin Pancakes

INGREDIENTS

  1. 2 eggs

  2. ¼ cup pumpkin puree

  3. 1 tablespoon coconut oil, melted, plus more for cooking

  4. 1 tablespoon pure vanilla extract

  5. 1 pinch baking soda

  6. ¾ teaspoon cinnamon

  7. ¼ teaspoon nutmeg

  8. 1 pinch ground cloves

  9. 1 pinch ground ginger

  10. 1 pinch salt

  11. melted grass-fed butter (optional)

  12. maple syrup (optional)

DIRECTIONS

  1. Mix wet ingredients.


  2. Mix dry ingredients in a separate bowl.


  3. Fold ingredients together.


  4. Add a bit of coconut oil to the pan or griddle and pour batter for 3-inch pancakes. Cook about 2 minutes per side.


  5. Serve topped with melted grass-fed butter and maple syrup, if desired.
